Hiya mommies! Just wanted to share a delish breakfast “treat” that I made for the little guy this morning.
Ben isn’t huge on sweets (he could care less about ice cream, doesn’t like pudding, and is pretty indifferent towards popsicles), but I have yet to find a cookie that he doesn’t loooovveee. These Breakfast Cookies are no exception. Your kiddos will think they are eating cookies- but really these are super-healthy (no butter, no oil, no eggs, just a smidgen of brown sugar)…and uber-quick and easy to make/store/eat! Perfect for when you are rushing out the door in the morning (as I all-too-often am).
To make these cookies, you will need:
- 1 1/2 cups of oats
- 1 cup unsweetened applesauce
- 2-3 super ripe ‘nanas
- A handful of craisins
- a few sprinkles of cinammon
- a bit of brown sugar
Simply throw everything in a bowl and give it a good stirring/mashing. Place large spoonfuls on a cookie sheet (lined with parchment paper) and place in the oven for 35 minutes at 350 degrees. I used 3 bananas and this recipe yielded 12 cookies.
